  • 1 Large egg
  • 2 Tbsp Heavy Cream
  • 2 Tbsp Coconut Flour
  • 2 Tbsp Olive Oil
  • 1/2 Tsp Baking Powder


  • Pour olive oil into a microwave-safe dish. Coat the sides and bottom evenly.
  • Beat the heavy cream and egg until well-mixed.
  • Stir in the baking powder and coconut flour.
  • Spread the batter evenly in the dish using a rubber spatula.
  • Cook in the microwave for 1-2 minutes (You know its ready when you insert a toothpick in the middle and it comes out clean).
  • You are now ready to use it how you like. Maybe butter! A sandwich?
