Keto Blueberry Pudding Recipe

This is great for a keto breakfast or dessert. This one has a base of chia seeds, blueberry, together with almond milk and coconut. Make a few and stick them in the fridge and they are ready to go at any time.

Ingredients
  

  • 1/2 cup Almond milk (also consider coconut milk)
  • 1/2 tsp Powdered Stevia
  • 1 tbsp Coconut flakes (Optional: toast the flakes in advance and store aside for toppings when serving)
  • 3 tbsp Chia Seeds
  • 1/4 cup Blueberries (frozen or fresh)
  • 1/4 tsp vanilla extract (optional – only if you want)

Instructions
 

  • Combine the almond milk, blueberries, chia seeds, and stevia in a bowl. Stir together then put in the fridge for at least 30 minutes. More time will allow the ingredients to solidify and firm up.
  • Top with coconut flakes as you like when you serve.

Notes

Think of the base ingredients and change as you like:
Fruit: Blueberries (what about raspberries or strawberries?)
Milk: Almond milk, coconut milk, or another milk substitute. 
Coconut flakes: What about toasted chopped nuts (walnuts, almonds)
The milk substance and the chia seeds providing the bulking. 
Spices: cinnamon, nutmeg, etc.
