Keto Coconut Flour Crepes Recipe

This is a tasty and light delight, made from coconut flour. It is versatile with any type of filling, sweet or salty. It is easy and quick to make requiring only 6 core ingredients. Adjust as you would like!

Ingredients
  

  • 2 tbsp Whole Milk
  • 1.5 tbsp Coconut Flour
  • 1 Egg
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Powdered Erythritol
  • 1/4 tsp Cinnamon

Instructions
 

  • Beat the egg in a bowl.
  • Whisk in the vanilla extract and milk.
  • Stir in the coconut flour until smooth and creamy.
  • Use a ladle and put measured amounts into a lightly oiled non-stick pan.
  • Swirl around and cook for about 30 seconds.
  • Dust wtih the powdered erythritol and cinnamon powder to serve
    (Another option is to include the cinnamon in the mixture itself before cooking.)

Notes

This recipe offers a great number of options for you. You can do so much with teh base of this coconut flour crepe.
Here are a few examples:
– Add a bit of Greek yogurt and a touch of no-sugar perserve or something similar.
– Make a ham and cheese sandwhich, but use the crepe instead of break.
